Bulk Order Cuts

We work with two phenomenal family-owned, local processors to ensure your order is packaged to perfection. Both processors are USDA-inspected livestock harvest and meat processing facilities.

Sometimes bulk orders can be somewhat confusing for customers: "What do I get with my order?", "What do I tell the processor?", "I have no idea where to start." Not to worry, we've got you covered! We have simplified the process to ensure you get a nice variety of all the standard cuts.

Below you will find a list of the standard cuts that are included in your order. If at any point you have questions, or if you have specific requests, please do not hesitate to give us a call or email us.

*A special note: Suet/fat and beef bones are not available with bulk orders, and their respective weights will not be included in your invoice.
  • Quarter

    • Ribeyes - 1” thick, 1/pkg (~5 per quarter)
    • Filets - 1.5” thick, 1/pkg (~3 per quarter)
    • NY Strips - 1” thick, 1/pkg (~6 per quarter)
    • Sirloin steaks - 1″ thick, 1/pkg (~3 per quarter)
    • Short ribs (all, 1 per quarter)
    • Brisket (cut in half, 1 per quarter)
    • Chuck roasts (~3 per quarter)
    • Rump roasts (2 per quarter)
    • Tenderized cube steaks
    • Tenderized sirloin tip steaks
    • Stew meat - (~2lbs)
    • Flank or Skirt steaks
    • Ground Beef - 1lb packages (~45 lbs/quarter)

    Fat content: 1/2” and 80/20 ground beef

  • Half

    • Ribeyes - 1” thick, 1/pkg (~10 per half)
    • Filets - 1.5” thick, 1/pkg (~6 per half)
    • NY Strips - 1” thick, 1/pkg (~12 per half)
    • Sirloin steaks - 1″ thick, 1/pkg (~6 per half)
    • Short ribs (all, 2 per half)
    • Brisket (cut in half, 2 per half)
    • Chuck roasts (~6 per half)
    • Rump roasts (4 per half)
    • Tenderized cube steaks
    • Tenderized sirloin tip steaks
    • Stew meat - (~4lbs)
    • Flank or Skirt steaks
    • Ground Beef - 1lb packages (~90 lbs/half)

    Fat content: 1/2” and 80/20 ground beef
