• The flat is easier to slice and used in traditional dishes like corned beef or used on sandwiches. This cut is known for being leaner with less marbling, but still extremely flavorful and tender, and it has a faster smoke time.
• The point is thicker and fattier with significant marbling. This rich and flavorful portion of the brisket is ideal for smoking, and braising. Just keep in mind that because of its thickness and fat content, it will take longer to cook compared to the flat.
