The Sierra Steak is sourced from the chuck primal and sits between the Delmonico and Denver cuts. Also referred to as the chuck flank, it is a versatile cut with robust beef flavor that is more affordable and suitable for various recipes and dishes. As it mimics the flank steak, it is often sliced against the grain before serving to maximize tenderness, especially after using a tenderizing marinade then grilling or broiling.

Sierra steaks are between 1.3 - 1.5lbs.
